Meal Plan and Grocery List 8/3-8/9

If you've got a ton of tomatoes getting ripe in your garden, this is the meal plan for you. Tomatoes on the menu Monday through Friday! And if you can't stand tomatoes...well, sorry...check back next week. Just kidding! You can always leave the tomato out...I suppose. But you're missing out. Tomatoes are a rich source of several nutrients. They are well known for their high vitamin C content, but also contain significant amount of vitamin A, B vitamins including niacin and riboflavin, magnesium, phosphorous and calcium. Tomatoes are also a good source of chromium, folate and fiber. And we've all heard that tomatoes are an excellent source of lycopene, a powerful antioxidant. Okay,okay, mother has spoken. Now on to the meal plan:

Monday August 3rd

Tomato and Basil Pasta

Tuesday August 4th

Steak Tacos

Wednesday August 5th

Skillet Lasagna

Thursday August 6th

Bacon Tomato and Cheese Toast

Friday August 7th

Pizza

Saturday August 8th

7 lbs tomatoes
1 cup basil leaves
1/2 cup pine nuts
scallions
parsley
2 zucchini
garlic
carrot
3 1/2 cups baby spinach
onion
cilantro

Meat

8 strips bacon
1 1/2 lb. top sirloin steak

Dairy

1 pkg cream cheese
shredded cheddar
grated mozzarella
ricotta cheese
eggs
parmesan cheese
1/3 lb. fresh mozzarella
queso fresco or Monterrey Jack cheese
12 flour tortillas

Canned Goods

Sun-dried tomato salad dressing
mayonnaise
olive oil

Dry Goods

1 pkg linguine
lasagna noodles
marjoram or oregano
chili powder
garlic powder
cayenne pepper

Freezer

Texas toast

Seven pounds of tomatoes...wow...I am paying $2.98 a pound for the good ones right now. My tomatoes in the front yard are still little green rock hard marbles lol.
