Meal Plan and Grocery List 5/10-5/16

First of all, Happy Mother's Day to all of you wonderful mothers who are reading! After only 5 years in this profession, I am convinced that there is no job more challenging or more rewarding. I feel so blessed by my two little angels! I am also thinking of those of you who are missing your mothers or have not had your heart's desire to be a mother met. I pray for peace in your hearts today.

My Mother's Day SO did not go as planned. I seemed to have picked up a "bug" on the plane or perhaps during my visit to "The Happiest Place on Earth". I could feel it coming on yesterday as I loaded my shopping cart full of $.88/lb split chicken breast packages. Rather than carry out my usual Mother's Day tradition: church, lunch with my family, and planting flowers with my girls, I spent the morning on the sofa waiting for my medicine to kick in while my daughters carried sloshing cups of coffee and candy to me. They really were very sweet little nurses. After noon, I began to feel better, so I tackled the 18.2 lbs. of chicken I had purchased, processing it into 8-10 freezer ready meals for our family. I totally overdid it! My husband did take the girls to out to pick up a wonderful carry-in dinner (complete with chocolate mousse cheesecake!) which left me alone for 1 fabulous hour in which I took the longest, quietest bath that I can remember since before my oldest child was born. It's the little things. Now I'm back to being confined to the couch and hoping that this is a short-lived illness. Stay tuned for a big post at the end of this week. I'll share just what I did with all of that chicken. In the meantime, here's the meal plan:

2 cans tomato soup
Banana pepper rings
1 can cream of chicken soup
Mayonnaise
1 jar salsa
Soy sauce
Rice vinegar
Hoisin sauce
Oil
Honey
Cider vinegar
Worcestershire sauce
Toasted Sesame Oil

Dry Goods

3 packets taco seasoning
Bread (for grilled cheese)
Curry powder
Bread crumbs
Brown sugar
Corn meal
Jasmin or basamati rice
Sugar

Freezer

6-8 oz. cheese tortellini
Garlic bread or Texas Toast
10-16 oz. broccoli cuts

I'm sorry that you weren't feeling well on mother's day. It does sound like you were pampered pretty well;D
I'm curious about the jalapeno popper grilled cheese. You'll have to tell me how you did that. It sounds delicious.

Being sick is bad enough, but being sick on Mothers Day is practically a crime. Yay for the long bath, though! I'm pretty sure the last one I had was the week I brought Ty home from the hospital and was under order to "soak".

I am looking forward to hearing about these jalapeno popper grilled cheeses!
