Make These For Your Saturday Morning Breakfast!

Bacon Twists.

If you read my post about BLT's or Sunday brunch, then you know how I feel about bacon. I'm a huge fan! Meat candy, right? I was pretty excited to try these bacon twists. The rub adds a subtle sweet and spicy dimension to the smoky, salty bacon. It was really nice. The extra steps of applying the rub and twisting the bacon took a little more time than just tossing the bacon into a skillet, but once the bacon was in the oven, I didn't need to babysit the stove and worry about turning the bacon over. Even better, I didn't need to clean up bacon grease splattered onto my stove top afterward.

Here's whatcha need: bacon (of course), brown sugar, ground mustard, cinnamon, nutmeg, cayenne pepper.

Combine the sugar and spices and rub onto the bacon. Then twist each piece of bacon and place on an oven safe rack on a baking sheet or on a broiling pan (as pictured below). By elevating the bacon, the fat drips away while baking. The finished product is crispy and not greasy. I prepared some slices with the rub and then left some slices plain for the kiddos. Bake at 350 degrees for about 30 minutes or until the desired crispness is achieved.

There you have it, a new twist on bacon. This would be an excellent way to prepare bacon for a crowd. I can fit more bacon on baking sheets than in my skillet. Rather that changing out batches of bacon from the skillet and trying to keep the cooked stuff warm, just twist the bacon and pop it into the oven. It's all ready and warm at the same time this way. You could even put two baking sheets full of bacon into the oven at one time if you're feeding a large group. Just a hint to file away for your next family brunch...

I love baking my bacon and I usually use my broiler pan so the grease falls down in the bottom.
