Now for a quick and easy snack!

Hummus on a Cracker

Our good friends arrived at our Saturday evening cook out armed with Triscuits, a tub of hummus, a jar of pickles, and some ripe tomatoes. In a matter of minutes, this platter of bite-sized appetizers graced my kitchen table:



Genius! So unexpectedly good! I tried this snack on three types of Triscuits: plain, garlic, and cracked pepper and olive oil. They were all good!

Hummus on a Cracker

Ingredients:

Triscuit crackers (your favorite flavor)
Prepared hummus
Sliced Dill pickles (they used cut up "Stackers", but the round slices would work too.)
Fresh, ripe tomatoes, sliced

Instructions:

Spread some hummus on each cracker. Arrange on a plate. Top with pickle or tomato. If you want to get fancy, garnish with parsley and sprinkle some freshly ground pepper on top.
