Spinach, Bacon, and Tomato Salsa Wraps
I found this wrap recipe in the July 2008 issue of Better Homes and Gardens. Wraps are so versatile, you can fill then with just about anything, and they're a nice change of pace from a traditional sandwich. I felt good about feeding this to my family for dinner, with it's lean protein the array of color and vitamins provided in the vegetables. Spinach is a superstar veggie!
This is another quick meal, especially if you do a little prep work ahead. I made the salsa ahead of time. Here are the players in this fresh, flavorful, from-scratch condiment: 2 large tomatoes, red onion, cilantro, a jalapeno, a grapefruit, and some kosher salt. What?! A grapefruit? Well, honestly it was supposed to be a lime for the juice, but I didn't have a lime...I had a grapefruit. Didn't you know? Grapefruit is the new lime. It's also a not-so-sweet citrus and it worked just fine for my purposes.
Chop everything up and toss it into a bowl.
Tah-dah! Fresh salsa. If you don't use it all up on your wraps, it's an excellent midnight snack with tortilla chips.
The next ingredient for the wraps is bacon. If you've been reading this blog for long, you know I love my bacon! However, I'm a little "weirded out" by turkey bacon. I mean, just look at it. It obviously doesn't come off of the turkey looking like this. Still, it is lower in fat, and I was going for healthy, so I gave it a whirl.
Assembly time! I warmed my tortillas so that they were soft and pliable. Then I slathered on a little light mayo. Topped that with a handful of baby spinach, a big spoonful of salsa, and 2 slices of the "bacon", then rolled it up. While you've got the assembly line up and running, you might want to make extra. I wrapped two extra in plastic wrap for my husband's lunch and he reported back that they were STILL good the next day.
These were really good! The little hint of creamy mayo, the smoky crispness of the bacon, the heat from the jalapeno, the fresh taste of the cilantro, and the bite of red onion all played together nicely for a really tasty wrap. The kids got a revised version of this wrap: Spinach (under the pretense that it was lettuce. Sneaky, sneaky), bacon, and light ranch dressing. I'm super happy that I got that much spinach into their growing bodies.
Today, I still had salsa and spinach leftover. They worked really well on the turkey sandwich that I prepared for lunch too!
Now for dessert! Because my kids were a little bummed that their daddy was working late AND because they ate every last bite of their wraps, I made whipped cream sundaes. That's right...just whipped cream. I didn't feel like wasting my energy scooping hard-as-a-rock, deep frozen ice cream last night. Topped with sprinkles, a few chocolate chips, and a cherry, these made for a pretty treat and the kiddos felt extra-special when I placed them on the table. 30 seconds of effort in exchange for great big smiles! Love it.

Bacon, Spinach, and Tomato Salsa Sandwich from Better Homes and Gardens
Start to Finish: 25 min.
Ingredients
2 large ripe tomatoes, seeded and coarsely chopped (about 1-3/4 cups)
1/4 cup finely chopped red onion
1/4 cup chopped fresh cilantro
1 Tbsp. finely chopped fresh jalapeƱo chile pepper
1 Tbsp. lime juice
1/8 tsp. kosher salt or salt
8 slices turkey bacon
1/4 cup light mayonnaise
4 10-inch vegetable-flavor flour tortillas or flour tortillas
2 cups fresh baby spinach
Directions
1. For tomato salsa, in a medium bowl, combine tomatoes, onion, cilantro, and chile pepper. Stir in lime juice and salt. Set aside.
2. Cook bacon according to package directions. Drain well on paper towels; cut bacon in large pieces.
3. For sandwiches, spread mayonnaise on tortillas; top with spinach. With a slotted spoon, scoop salsa on spinach. Top with bacon. Roll up tortillas to enclose filling. Cut each tortilla in half. Makes 4 servings.

ReplyDeleteNice wrap! I'm a fan of those too. Psst... you know you can microwave that hard ice cream on defrost for 30 seconds to a minute to soften it right? I do it all the time! Not that I eat ice cream ALL the time LOL...

ReplyDeleteI had some leftover heavy cream from my cheesecake recipe, so last night I showed my daughter how you can add some sugar and whip it into whipped cream - she was amazed! I love easy desserts!
These wraps are so colorful - it's like eating a colorful rainbow! I like wraps so much better than regular sandwich bread.

That wrap looks totally awesome! I've never tried turkey bacon (LOL on being weirded out because it didn't come off the turkey looking like that ~ exactly how I feel!).
ReplyDeleteThis wrap is DELICIOUS! The only thing we did differently was that we crumbled the bacon into it instead of leaving it in strips. My kids LOVED this and asked for more! This will be on our 'make often' list! Thank you for sharing it! PS, did not use turkey bacon, it's funky, we used the real stuff!
