Cooking with Nick: Fettucini with Roasted Chicken and Lemon Cream Sauce

Today features my first guest cook on Krista's Kitchen. I received the following email from my friend, and Krista's Kitchen reader, Chanda. I have to say that I'm not only impressed that they are meal planning, but also that her husband cooks. It's not that mine can't...it's just that he almost never does, unless it involves the grill.

Nick would like to make a guest appearance on Krista's Kitchen. We have been meal planning every week and last night...we thought Nick should pick one night out of the week to cook something up! On our last trip to Costco they were handing out their cookbook (weird but awesome) and it seriously is one of the best I have ever seen! He chose to make Fettuccine with Roasted Chicken and Lemon Cream Sauce...he is pretty proud of himself because we scraped the pan!





Fettuccine with Roasted Chicken and Lemon Cream Sauce

note: Nick grilled chicken instead of roasting

Ingredients:
1 pound boneless, skinless chicken thigh meat
2 tablespoons olive oil plus more for coating chicken
salt and pepper
1 pound fettuccine
2 tablespoons minced garlic
1 small shallot, minced
1/2 cup dry white wine
2 cups chicken broth
2 cups heavy cream
1/2 bunch Italian parsley, chopped
juice and grated peel of one lemon
1/2 cup grated Parmesan cheese

Directions:
Preheat oven 350 (if you decide to roast chicken)
Place chicken in roasting pan and thinly coat with olive oil. Season to taste with salt and pepper.
Roast chicken for 45 minutes, or until cooked. Let cool and shred into thin strips.
Prepare pasta according to package directions.
In large saute pan, heat 2 tablespoons of olive oil over medium-high heat. Add garlic and shallots and saute and be careful not to brown. Add wine and cook until reduced by half. Add chicken broth and cream and simmer over medium heat stirring until sauce begins to thicken.
Add chicken, parsley, lemon juice and peel, salt and pepper to taste.
Combine with pasta and top with Parmesan cheese..yum!

  1. I'm so proud Krista's Kitchen has inspired us all, Brandon and the kids had a make your own pizza night at our house yesterday! Looking Good Nick we'll have to try out your recipe.
